The making of the wines :
Vinification of the Great White Wines


After sorting, the whole bunches (grapes and stems) are immediately pressed. The juice is then racked (to separate the must from any matter in suspension) at cellar temperature for 12 hours then poured into oak casks for fermentation and ageing.
