Ageing in oak


For several months, each wine will evolve, develop, and gradually unveil the spirit of the land from which it comes.

The choice of the container used for this transformation is absolutely essential so that each appellation is aged in the most suitable conditions.

With its savoir-faire and the experience of years of research, Bouchard Père & Fils is uncompromising in its choice of casks. The origin of the oak, the beauty of the grain, the texture, the type of heat used : all this is carefully considered as it will influence the aromatic potential and style of tannin. At Bouchard Père & Fils, the tradition is "just the right amount of cask in the wine to allow it to show off its fruit, its origin, without masking the land it comes from".

The quiet of the ageing period is regularly interrupted by racking, topping up, fining and tastings to follow the complete evolution of the wine until the day when the cellar master decides on the date for bottling.
