The right balance
Wine refines itself during the ageing process, gradually revealing the finesse and spirit of its place of origin. It is vital to find the right balance between grape flavours and the complexity that comes from barrel ageing. Considerable experience and constant experimental curiosity has led Bouchard Père & Fils to be particularly careful with their barrel ageing: oak origins, grain quality, duration of stave ageing, and type and length of charring are ingredients to be combined according to the origin and potential of the grapes in each wine. This explains why the company has elected to control the origin and the production of a high proportion of its barrels.
