Picking at just the right moment

In the weeks that precede the start of harvest, test samplings increase so as to determine in optimal fashion the date which will allow, for each parcel, the harvesting of healthy grapes at the height of their ripeness.
At the opportune moment, the teams of harvesters hand-pick the grapes, in small 12 kg crates to avoid crushing the berries. They are then directed as quickly as possible to the cuverie Saint-Vincent where a final sorting is carried out to remove remaining leaves and any last grapes that are insufficiently ripe or damaged.
